Classic low-and-slow ribs with a set bark and tender bite.
- Remove any loose membrane if present and season the ribs on both sides.
- Preheat the smoker to 250°F.
- Smoke bone-side down until the bark is set and the rack has good color.
- Wrap with a small amount of liquid or butter if desired, then continue until the rack bends easily and the meat is tender.
- Unwrap, sauce during the final 15–30 minutes if using, then rest 10 minutes before slicing.
Tender ribs with a broiled finish and no smoker required.
- Heat the oven to 325°F and season the ribs.
- Place bone-side down on a foil-lined pan and cover tightly.
- Bake until the meat is tender and the rack bends easily.
- Uncover, brush with sauce if desired, and broil briefly to caramelize the surface.
- Rest 10 minutes and slice between the bones.
